In the last 30 years in the vineyards of Bodegas Carrau Las Violetas and Cerro Chapeu, we explored the best soils and plots of varieties best grapes adapted for high expression and quality. In this wine we have developed a very particular cut from the same variety Cabernet sauvignon from the two regions, 60% of Cerro Chapeu and 40% of Violets, so we increased complexity and a different style.
The YSERN Cabernet Cabernet is a tribute to our predecessor Margarita Ysern, from winemaking family, who marries
Jaime Carrau in 1680 in Catalonia. She was one of the influences for the Carrau family, boaters in Vilassar de Mar,
manifest interest in the vineyard in early 1700.

 

Cerro Chapeu:
CLIMATE: Temperate, continental more than 300 m above sea level, with good thermal differential.
SOIL TYPE: Sandy reddish, very low fertility, deep and with great drainage.
Violets:
CLIMATE: Temperate with influence of the Rio de la Plata and the Atlantic Ocean.
TYPES OF SOIL: clayey soils with high levels of organic matter and the presence of limestone, depth
half.
TYPE OF GRAPES: 100% Cabernet sauvignon from two different regions.
TYPE OF HARVEST: Manual in boxes of 16 kg.
Crushing: On the tank without pumps.
BOTTLING: July 2007.
